Kerala Chicken Biryani Recipe | Authentic Spicy Layered Biryani

Kerala Chicken Biryani is a traditional South Indian delicacy, packed with layers of fragrant basmati rice, spiced chicken, and caramelized onions. Known for its bold flavors and rich aroma, this biryani is a feast in every bite. Perfect for festivals or weekend cravings!


Ingredients:

  • 2-3 Cinnamon Sticks
  • 10 Cardamon
  • 500G Basmati Rice (i used normal rice in the video)
  • Coconut Oil
  • 2-3 Onions
  • 1 Chopped Garlic
  • 750g Chicken Drumstick
  • Black Pepper Powder
  • Biryani Masala Powder
  • Turmeric Powder
  • Red Chili Powder
  • Salt
  • 1 Lime
  • Bayleaf
  • Mint
  • Coriander leaf
  • Cashew
  • Almonds
  • Peanuts

Instructions

  1. Add cinnamon sticks, cardamom, and rice to a pot. Cook the rice 80% and set aside.
  2. Meanwhile, heat oil and fry sliced onions until golden and crisp. Set aside half for garnishing.
  3. In a bowl, mix chicken drumsticks with chopped garlic, biryani masala powder, turmeric, black pepper, chili powder, salt, and lime juice. Let it marinate for 10–20 minutes.
  4. In a cooking pot, add cinnamon, cardamom, bay leaf, garlic, onion, chili powder, pepper powder, turmeric, biryani masala, and salt. Sauté until oil separates.
  5. Add the marinated chicken drumsticks and a little water. Cover tightly and cook on low heat (dum) for 15–20 minutes.
  6. Once chicken is cooked, layer with coriander leaves, fried onions, rice, mint, cashews, almonds, and peanuts.
  7. Mix gently and let it rest for a few minutes before serving.
  8. Serve hot with love ❤️
